Ingredients
2 large red bell peppers, sliced
2 large green bell peppers, sliced
1 medium onion, sliced
3 tablespoons olive oil
1 teaspoon garlic, minced
1 teaspoon dried oregano
1 cup shredded cheese
Salt, to taste
Black pepper, to taste
Fresh parsley, chopped (for garnish)
Method
1. Heat olive oil in a large skillet over medium heat.
2. Add sliced bell peppers and onion to the skillet. Cook for about 5 minutes until they begin to soften.
3. Stir in minced garlic and oregano. Season with salt and black pepper. Cook for an additional 5 minutes.
4. Sprinkle shredded cheese over the vegetable mixture. Cover the skillet and let it sit until the cheese melts.
5. Once melted, garnish with fresh parsley and serve hot.
