Cranberry Walnut Coleslaw with Shaved Brussels Sprouts

Ingredients
500 g Brussels sprouts, trimmed
2 cups green cabbage, shredded
1 cup carrots, grated
1 cup dried cranberries
1 cup walnuts, chopped
120 ml mayonnaise
1 tablespoon apple cider vinegar
1 tablespoon honey
Salt to taste
Pepper to taste

Method
1. Start by using a sharp knife to shave the Brussels sprouts into thin pieces.
2. In a large mixing bowl, combine the shaved Brussels sprouts, shredded cabbage, grated carrots, cranberries, and chopped walnuts.
3. In a small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth.
4. Pour the dressing over the vegetable mixture and toss everything together until well coated.
5. Serve immediately or let it chill in the fridge for about 30 minutes to enhance the flavors.
