Ingredients

1. 1 cup of quinoa
2. 2 cups of vegetable broth
3. 1 tablespoon of olive oil
4. 1 onion, diced
5. 2 cloves of garlic, minced
6. 1 red bell pepper, diced
7. 1 zucchini, diced
8. 1 teaspoon of dried oregano
9. Salt and pepper to taste
10. 1 cup of fresh spinach

Method

1. Rinse the quinoa under cold water. Combine it with vegetable broth in a medium saucepan. Bring to a boil.
2. Reduce heat to low. Cover the saucepan and let it simmer for about 15 minutes. Fluff the quinoa with a fork once cooked.
3. While the quinoa cooks, heat olive oil in a large skillet. Sauté the onion and garlic until they become soft.
4. Add the red bell pepper and zucchini to the skillet. Cook for about 5-7 minutes until tender. Season with oregano, salt, and pepper.
5. Stir in the cooked quinoa and fresh spinach. Cook until the spinach wilts, then serve warm.
