Ingredients
– 1 rack of lamb (about 1 kg)
– 2 tablespoons olive oil
– 2 teaspoons salt
– 1 teaspoon black pepper
– 3 cloves garlic, minced
– 1 tablespoon fresh rosemary, chopped
– 1 tablespoon fresh thyme, chopped
– 1 tablespoon Dijon mustard
– 1 tablespoon honey
– 1 lemon, zested and juiced
Method
1. Preheat the oven to 200°C. Line a baking tray with foil to make cleanup easier.
2. Season the lamb with salt, pepper, and olive oil. Rub the spices all over the meat.
3. Mix garlic, rosemary, thyme, Dijon mustard, honey, lemon zest, and juice in a small bowl. Spread this mixture evenly over the lamb.
4. Place the rack of lamb on the prepared baking tray. Roast it in the oven for about 25 to 30 minutes for medium-rare.
5. Let the lamb rest for 10 minutes before slicing. Serve with your favorite sides.
