Roasted Brussels Sprouts with Pomegranate and Bacon
Ingredients
500 g Brussels sprouts
100 g bacon
1 pomegranate
30 ml olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
30 g feta cheese
1/4 cup walnuts
Method
1. Preheat the oven to 200°C. Line a baking tray with baking paper.
2. Trim and halve the Brussels sprouts. Spread them on the tray.
3. Chop the bacon into small pieces. Scatter the bacon over the Brussels sprouts.
4. Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, and onion powder. Toss to combine.
5. Roast in the oven for 20-25 minutes. When done, mix in pomegranate seeds, feta cheese, and walnuts.
