Ingredients
500 g ground turkey
1 tsp olive oil
1 cup diced onion
1 cup corn
1 cup black beans, drained and rinsed
1 cup diced tomatoes
2 tsp taco seasoning
2 cups cooked rice
1 cup shredded cheese
1 avocado, sliced
Method
1. Heat the olive oil in a large skillet over medium heat.
2. Add the onion and cook until it becomes soft, about 5 minutes.
3. Stir in the ground turkey and cook until it’s no longer pink, around 7 minutes.
4. Mix in the corn, black beans, diced tomatoes, and taco seasoning. Cook for an additional 5 minutes.
5. Serve the turkey mixture over rice. Top with shredded cheese and slices of avocado.
