Ingredients

1 cup pumpkin puree
1 cup almond milk

1 tablespoon apple cider vinegar
2 cups all-purpose flour

Method

1. Start by preheating your oven to 180 degrees Celsius (350 degrees Fahrenheit). Line a muffin tin with cupcake liners or grease it lightly.
2. In a large bowl, mix together the pumpkin puree, almond milk, maple syrup, and apple cider vinegar until it’s well combined.
3. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, salt, and nutmeg.
