Thai Sticky Rice

Ingredients
2 cups sticky rice
1 cup coconut milk
½ cup sugar
¼ teaspoon salt
1 ripe mango, sliced
Sesame seeds, for garnish (optional)
Banana leaves or parchment paper

Method
1. Rinse the sticky rice under cold water until the water runs clear. This helps remove excess starch.
2. Soak the rice in water for at least 4 hours or overnight. Drain it well afterward.
3. Prepare a steamer basket lined with banana leaves or parchment paper and place it over boiling water.
4. Spread the drained rice evenly in the steamer. Cover and steam for about 20-25 minutes until the rice is tender.
5. While the rice cooks, combine coconut milk, sugar, and salt in a saucepan. Heat gently until the sugar dissolves. Mix half of the coconut mixture into the cooked rice. Serve the rice with mango slices, drizzling the remaining coconut sauce on top. Garnish with sesame seeds if desired.
