Ingredients
1. 600 g pumpkin, peeled and diced
2. 1 tablespoon olive oil
3. 1 teaspoon salt
4. 1/2 teaspoon black pepper
5. 1 teaspoon cinnamon
6. 2 tablespoons brown sugar
7. 1/2 cup pecans, chopped
8. 1/4 cup dried cranberries
9. 1 tablespoon fresh parsley, chopped (optional)

Method
1. Preheat the oven to 200°C.
2. Toss the pumpkin in olive oil, salt, pepper, cinnamon, and brown sugar in a large bowl.
3. Spread the seasoned pumpkin on a baking tray in a single layer.
4. Roast for 25-30 minutes until tender and lightly caramelized.
5. Mix in pecans and cranberries after removing from the oven. Garnish with parsley if desired.
