Ingredients
– 500 g chicken breast, diced
– 2 cups broccoli florets
– 1 red bell pepper, sliced
– 1 carrot, sliced
– 2 cloves garlic, minced
– 3 tablespoons soy sauce
– 2 tablespoons olive oil
– 1 tablespoon honey
– 1 teaspoon ginger, grated
– 2 cups cooked rice
Method
1. Heat olive oil in a large frying pan over medium heat. Add diced chicken and cook until browned, about 5-7 minutes.
2. Toss in minced garlic, ginger, and sliced carrots. Stir for 2-3 minutes until fragrant.
3. Add broccoli florets and red bell pepper strips. Stir-fry for another 5 minutes until the vegetables are tender.
4. Mix soy sauce and honey in a bowl, then pour it over the chicken and vegetables. Cook for 2 more minutes.
5. Serve the chicken and veggies over cooked rice. Enjoy your meal!
