Ingredients
– 500 g cherry tomatoes
– 3 tablespoons olive oil
– 1 teaspoon salt
– 1 teaspoon black pepper
– 1 teaspoon dried oregano
– 1 teaspoon garlic powder
– 1/4 teaspoon red pepper flakes
– Balsamic vinegar (to drizzle)
– Fresh basil leaves (for topping)
– Grated cheese (optional)
Method
1. Preheat the oven to 200 degrees Celsius.
2. Wash the cherry tomatoes and place them in a large bowl.
3. Add olive oil, salt, black pepper, oregano, garlic powder, and red pepper flakes to the bowl. Toss everything until the tomatoes are well coated.
4. Spread the tomatoes evenly on a baking tray lined with baking paper. Roast them in the oven for about 20-25 minutes, until they are soft and caramelized.
5. Once done, remove from the oven and drizzle with balsamic vinegar. Top with fresh basil and grated cheese if desired.
