Ingredients
- 1 cup rice
- 2 cups water
- 1 lemon (zested and juiced)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 green onions (sliced)
- 1/4 cup parsley (chopped)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon turmeric (optional)
Method
- Rinse the rice under cold water until the water runs clear.
- Combine the rice, water, salt, and turmeric in a pot. Bring to a boil over medium heat.
- Reduce the heat to low, cover the pot, and simmer for 15 minutes or until the rice is tender.
- Remove the pot from heat and let it sit for 5 minutes, then fluff the rice with a fork.
- Mix in the olive oil, lemon juice, lemon zest, black pepper, green onions, parsley, and garlic powder. Serve warm.
