Ingredients
– 1 cup farro
– 3 cups water
– 1 cup cherry tomatoes, halved
– 1 cucumber, diced
– 1 red bell pepper, diced
– 1/2 red onion, finely chopped
– 1/4 cup fresh parsley, chopped
– 1/4 cup olive oil
– 2 tablespoons balsamic vinegar
– Salt and pepper to taste
Method
1. Begin by rinsing the farro in cold water.
2. In a pot, combine farro and water. Bring it to a boil, then reduce the heat and simmer for about 30 minutes, or until tender.
3. Drain any excess water from the farro and let it cool.
4. While the farro cools, chop the tomatoes, cucumber, bell pepper, and onion. Add these vegetables to a large mixing bowl.
5. Stir in the cooled farro, parsley, olive oil, balsamic vinegar, and season with salt and pepper. Mix until everything is well combined.
