Ingredients
- 1 medium cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 8 small tortillas
- 1 cup shredded cabbage
- 1 avocado, sliced
- 1 lime, cut into wedges
- Fresh cilantro for garnish
Method
- Preheat your oven to 200°C (400°F).
- In a bowl, toss the cauliflower florets with olive oil, cumin, smoked paprika, and garlic powder until well coated.
- Spread the seasoned cauliflower on a baking sheet. Roast for about 25 minutes until tender and lightly browned.
- Warm the tortillas in a pan on low heat for a few minutes.
- Assemble the tacos by placing roasted cauliflower on each tortilla. Top with cabbage, avocado slices, cilantro, and a squeeze of lime juice.
