Method
1. In a bowl, whisk together the cottage cheese, eggs, milk, salt, and pepper until smooth.
2. Heat olive oil or butter in a non-stick pan over medium heat.
3. Pour the egg mixture into the pan and cook for about 3-4 minutes, stirring gently.
4. Add the spinach and diced tomato to the pan, continuing to cook until the eggs are set.
5. Sprinkle with shredded cheese and fresh herbs before serving.
