Method
1. Start by heating the olive oil in a large pan over medium heat.
2. Add the minced garlic and cook for about 1 minute until fragrant.
3. Place the chicken pieces into the pan and cook until they turn golden brown.
4. Stir in the broccoli, carrots, and bell pepper. Cook for approximately 5 minutes or until the vegetables are tender.
5. Mix in soy sauce, honey, and ground ginger. Serve the chicken and vegetables over cooked rice.
