Mushroom Strudel Recipe

Ingredients
2 cups mushrooms, chopped
1 cup spinach, chopped
1 onion, finely chopped
2 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon dried thyme
6 sheets filo pastry
1 cup ricotta cheese
1 teaspoon salt
1 egg, beaten

Method
1. Preheat your oven to 200°C (400°F).
2. Heat olive oil in a pan over medium heat. Add onion and garlic, cooking until soft.
3. Stir in mushrooms and spinach, cooking until they release moisture. Season with thyme and salt.
4. On a clean surface, layer 3 filo sheets, brushing each with a bit of olive oil. Spread half of the mushroom mixture and dollop half of the ricotta on top.
5. Roll the pastry tightly into a log shape, then place on a baking tray. Brush the top with beaten egg. Bake for 25-30 minutes or until golden brown.
