Ingredients
250 ml boiling water
160 g pitted dates, chopped
1 tsp baking soda
60 g unsalted butter, softened
100 g brown sugar
1 large egg
1 tsp vanilla extract
200 g all-purpose flour
1 tsp baking powder
1 pinch of salt

Method
1. Preheat the oven to 180°C (350°F). Grease an 8-inch baking dish.
2. In a bowl, combine the boiling water, chopped dates, and baking soda. Let it sit for 10 minutes.
3. In another bowl, mix butter and brown sugar until creamy. Add the egg and vanilla.
4. Stir in the flour, baking powder, and salt into the butter mixture. Then, fold in the date mixture.
5. Pour the batter into the baking dish and bake for 30-35 minutes until cooked through.
