Ingredients
– 1 can (400 g) black beans, drained and rinsed
– 1 cup corn kernels
– 1 cup diced cherry tomatoes
– 1 avocado, diced
– 1 cup diced cucumber
– 1 cup finely chopped red onion
– 1/2 cup chopped fresh coriander
– 1/4 cup fresh lime juice
– 2 tablespoons olive oil
– Salt and pepper to taste
Method
1. Rinse the black beans under cold water and let them drain.
2. In a large bowl, combine the beans, corn, cherry tomatoes, avocado, cucumber, red onion, and coriander.
3. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
4. Pour the dressing over the salad mixture and gently toss everything together.
5. Serve immediately or refrigerate for 30 minutes to let the flavors meld.
