Method

1. Heat olive oil in a large pot over medium heat.
2. Add diced onion and cook until soft, about 5 minutes.
3. Stir in minced garlic, chopped carrot, and bell pepper. Cook for 3 more minutes.
4. Pour in canned tomatoes, oregano, salt, and pepper. Bring to a simmer.
5. Mix in chickpeas and cook for another 10 minutes, stirring occasionally.
