Ingredients
– 500 g chicken breast
– 2 tablespoons olive oil
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1 teaspoon garlic powder
– 1 cup broccoli florets
– 1 cup cherry tomatoes
– 1 cup cooked rice
– 1/4 cup grated cheese
– 1 tablespoon fresh parsley
Method
1. Preheat the oven to 200°C.
2. Cut the chicken breast into bite-sized pieces and place them in a mixing bowl.
3. Add olive oil, salt, pepper, and garlic powder to the chicken. Toss everything together until well coated.
4. Spread the chicken on a baking tray. Place broccoli and cherry tomatoes around the chicken. Bake for 20-25 minutes.
5. Serve the chicken and veggies over cooked rice. Top with grated cheese and fresh parsley.
