Ingredients
- 1 cup chopped dates
- 1 cup boiling water
- 1/2 cup brown sugar
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 cup toffee sauce (store-bought or homemade)
Method
1. Preheat the oven to 180°C (350°F). Grease a baking dish.
2. Combine the chopped dates and boiling water in a bowl. Let it sit until cool.
3. In another bowl, mix brown sugar and butter until creamy. Add the egg and vanilla, then stir well.
4. Slowly add the flour, baking powder, and baking soda to the mixture. Pour in the cooled date mixture and mix until combined.
5. Transfer the batter to the baking dish. Bake for about 30 minutes or until a skewer comes out clean. Drizzle with toffee sauce before serving.
