Ingredients

4 chicken breasts
1 cup plain flour
2 large eggs
1 cup breadcrumbs
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon pepper
50 g unsalted butter
2 cloves garlic, minced

Method

Start by flattening the chicken breasts between two sheets of plastic wrap using a meat mallet or rolling pin. Aim for an even thickness of about 1 cm.

Next, set up a breading station. Place the flour in a shallow dish. In another dish, whisk the eggs. Put the breadcrumbs in a third dish and mix in the garlic powder, salt, and pepper.

Now, coat each chicken breast. First, dip one in flour, covering it completely. Next, move to the egg, allowing any excess to drip off, and then press into the breadcrumbs. Make sure it’s well coated.

Heat a large frying pan over medium heat. Add the butter and let it melt. Once melted, add the chicken schnitzels cook for 4-5 minutes per side, until golden brown and cooked through.

Finally, while the schnitzels are cooking, add minced garlic to the pan during the last two minutes. This will create a flavorful garlic butter. Serve hot.
