Ingredients
1. 1 kg chicken pieces
2. 1 cup green olives, pitted
3. 1 cup prunes, pitted
4. 1/2 cup capers, drained
5. 4 cloves garlic, minced
6. 2 tablespoons oregano
7. 1/4 cup red wine vinegar
8. 1/4 cup olive oil
9. 1/2 cup brown sugar
10. 1/2 cup white wine
Method
1. Preheat the oven to 180°C.
2. In a large bowl, mix the olives, prunes, capers, garlic, oregano, red wine vinegar, olive oil, and brown sugar.
3. Add the chicken pieces into the bowl and toss to coat them well with the mixture.
4. Transfer the chicken and the marinade into a baking dish. Pour the white wine over the chicken.
5. Bake for 1 hour, turning the chicken halfway through until it’s cooked and golden.
