Vegan Pumpkin Soup Recipe
Ingredients
1 cup pumpkin puree
1 onion, chopped
2 cloves garlic, minced
1 tablespoon olive oil
2 teaspoons ground cinnamon
1 teaspoon ground ginger
4 cups vegetable broth
1 can coconut milk (400ml)
Salt to taste
Pepper to taste
Method
1. Heat olive oil in a pot over medium heat.
2. Add chopped onion and garlic. Sauté until the onion becomes soft.
3. Stir in pumpkin puree, cinnamon, and ginger. Mix well for one minute.
4. Pour in vegetable broth and bring the soup to a boil. Reduce the heat and let it simmer for 15 minutes.
5. Remove from heat and stir in the coconut milk. Blend until smooth and add salt and pepper to taste.
