Ingredients
1 cup basmati rice
4 cups milk
1 cup sugar
1/4 cup chopped nuts (almonds, pistachios)
1/4 teaspoon cardamom powder
1/2 teaspoon vanilla extract
1/4 cup raisins
1 tablespoon ghee
1/4 teaspoon salt
2 tablespoons chopped fresh fruit (optional)
Method
1. Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 30 minutes, then drain well.
2. In a large pot, heat the ghee on medium heat. Add the drained rice and sauté for about 2 to 3 minutes, stirring well.
3. Pour in the milk and add the salt. Bring the mixture to a gentle boil, then reduce the heat to low.
4. Stir in sugar, cardamom powder, vanilla extract, and raisins. Let it simmer for about 20 minutes, stirring occasionally until the rice becomes soft and creamy.
5. Once done, mix in the chopped nuts and fresh fruit if using. Serve warm or chilled.
