Ingredients
– 500 g yellow pumpkin, diced
– 2 tablespoons oil
– 1 teaspoon mustard seeds
– 1 onion, chopped
– 2 green chilies, slit
– 1 teaspoon turmeric powder
– 1 teaspoon red chili powder
– 1 cup water
– 1 cup coconut milk
– Salt to taste
Method
1. Heat oil in a large pan over medium heat. Add the mustard seeds and let them splutter.
2. Stir in the chopped onion and green chilies. Sauté until the onion becomes translucent.
3. Sprinkle in the turmeric powder and red chili powder. Mix well for a minute to release the spices’ flavors.
4. Add the diced pumpkin and water. Cover the pan and cook until the pumpkin is tender, about 10 minutes.
5. Pour in the coconut milk and season with salt. Stir and let it cook for another 5 minutes before serving.
