Delicious Jain Whole Green Moong Dal Subzi Recipe – Gujarati Style

Ingredients

1 cup whole green moong dal
2 tablespoons oil
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon jaggery (or brown sugar)
1/2 teaspoon salt
2 tablespoons lemon juice
2 tablespoons chopped coriander leaves

Method

Wash the whole green moong dal and soak it in water for 30 minutes. Drain the water afterward.

Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds; let them crackle for a few seconds.

Stir in turmeric powder, red chili powder, and jaggery. Mix well for another minute.

Add the soaked dal to the pan. Pour in enough water to cover the dal and bring to a boil. Reduce the heat and let it simmer until tender.

After cooking, add salt and lemon juice. Garnish with chopped coriander leaves before serving.
