Ingredients
300 g pasta
400 g sausages, casings removed
400 g canned chopped tomatoes
150 g sun-dried tomatoes, chopped
200 g baby spinach
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon olive oil
1/2 cup grated cheese
Salt and pepper, to taste
Method
1. Cook the pasta according to the package instructions. Drain and set aside.
2. In a large pan, heat the olive oil over medium heat. Add the sausages and cook until browned.
3. Stir in the garlic, oregano, and sun-dried tomatoes. Cook for 2 minutes until fragrant.
4. Add the canned tomatoes and spinach. Simmer for 5 minutes, then mix in the cooked pasta.
5. Season with salt and pepper. Serve topped with grated cheese.
