Ingredients

– 2 cups cooked rice
– 1 cup mozzarella cheese, cubed
– 1 large egg
– 1 cup breadcrumbs
– 1/2 cup grated Parmesan cheese
– 1/2 cup all-purpose flour
– 3 cups vegetable oil (for frying)
– 1 cup marinara sauce (for serving)
– Salt to taste
– Black pepper to taste

Method

1. Start by mixing cooked rice, mozzarella cheese, egg, salt, and pepper in a large bowl until everything is combined.
2. Shape the mixture into small balls, about the size of a golf ball.
3. Set up a breading station with flour in one bowl, beaten egg in another, and breadcrumbs in a third. Dip each ball first in flour, then egg, and finally coat with breadcrumbs.
4. Heat vegetable oil in a deep pan over medium-high heat. Once hot, carefully add arancini balls a few at a time and fry until golden brown, about 3-4 minutes.
5. Remove the fried arancini and place them on a paper towel to drain excess oil. Serve warm with marinara sauce.
