Ingredients
– 500g chicken breast
– 2 tablespoons olive oil
– 1 onion, diced
– 2 cloves garlic, minced
– 1 tablespoon ginger, grated
– 400ml coconut milk
– 200g kale, chopped
– 1 tablespoon soy sauce
– 1 teaspoon curry powder
– Salt and pepper to taste
Method
1. Heat olive oil in a large pan over medium heat.
2. Add the diced onion and cook until soft, about 5 minutes.
3. Stir in minced garlic and grated ginger, cooking for another minute.
4. Place the chicken pieces in the pan and cook until they are browned.
5. Pour in coconut milk, add kale, soy sauce, curry powder, salt, and pepper. Simmer for 15 minutes until chicken is cooked through.
