Ingredients
1 cup wild rice
2 tablespoons olive oil
1 onion, chopped
2 carrots, sliced
2 stalks celery, chopped
3 cloves garlic, minced
1 teaspoon dried thyme
1.5 liters vegetable broth
2 cups spinach, chopped
Salt and pepper, to taste
Method
Heat olive oil in a large pot over medium heat.
Sauté the onion, carrots, and celery until they soften.
Add garlic and thyme, stirring for about a minute.
Pour in the vegetable broth and wild rice, then bring to a boil.
Simmer for about 45 minutes or until the rice is tender, then add spinach and season with salt and pepper.
