Ingredients

300 g pasta
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
300 g mushrooms, sliced
100 ml vegetable broth
200 ml cream
100 g grated cheese
Salt and pepper, to taste
Chopped parsley, for garnish

Method

Boil a large pot of salted water and cook the pasta according to package instructions. Drain and set aside.

Heat olive oil in a large pan over medium heat. Add the onion and cook until softened. Stir in the garlic and cook for another minute.

Add the mushrooms to the pan and sauté until they are golden brown. Pour in the vegetable broth and let it simmer for a few minutes.

Stir in the cream and cheese, mixing well. Season with salt and pepper.

Combine the cooked pasta with the sauce, mixing until everything is coated. Sprinkle with chopped parsley before serving.
