Peanut Curry Recipe
Ingredients
1 cup peanut butter
1 cup coconut milk
1 cup vegetable broth
1 tablespoon curry powder
1 tablespoon soy sauce
1 tablespoon brown sugar
1 teaspoon grated ginger
1 clove garlic, minced
2 cups mixed vegetables (such as bell peppers, carrots, and broccoli)
Cooked rice, for serving
Method
Heat a large pan over medium heat.
Add the garlic and ginger, sautéing for about 1 minute until fragrant.
Stir in the curry powder, then mix in the peanut butter and brown sugar until smooth.
Pour in the coconut milk and vegetable broth, stirring to combine well.
Add the mixed vegetables and simmer for about 10 minutes until tender. Serve over cooked rice.
