Ingredients
– 2 cups of carrots, grated
– 2 cups of green beans, chopped
– 1 tablespoon of oil
– 1 teaspoon of mustard seeds
– 1 teaspoon of urad dal
– 1 onion, finely chopped
– 2 green chilies, slit
– 1/2 teaspoon of turmeric powder
– Salt to taste
– 1/4 cup of fresh coconut, grated
Method
1. Heat the oil in a pan over medium heat. Add mustard seeds and urad dal, cooking until the seeds pop and the dal turns golden.
2. Stir in the chopped onion and green chilies. Cook until the onion becomes soft and translucent.
3. Mix in the grated carrots and chopped green beans. Sauté for a few minutes until they begin to soften.
4. Sprinkle turmeric powder and add salt. Stir everything well, cooking for another 5-7 minutes.
5. Finally, add the grated coconut and mix well. Cook for an additional 2 minutes before serving.
