Maharashtrian Tendli Bhaji with Peanuts (Ivy Gourd Stir Fry)
Ingredients
500 g ivy gourd (tindora)
2 tbsp oil
½ tsp mustard seeds
½ tsp cumin seeds
1 onion, chopped
2 green chilies, sliced
½ tsp turmeric powder
1 cup peanuts, roasted
Salt, to taste
Coriander leaves, for garnish
Method
Start by washing the ivy gourds thoroughly. Slice them into thin pieces.
Heat the oil in a pan over medium heat. Add the mustard seeds and cumin seeds. Allow them to splutter for a few seconds.
Next, add the chopped onion and sliced green chilies. Sauté until the onions turn golden brown.
Stir in the turmeric powder and sliced ivy gourd. Mix well and cook for 5-7 minutes until the gourds soften.
Add the roasted peanuts and salt. Cook for another 2-3 minutes. Garnish with coriander leaves before serving.
