Ingredients
– 200 g of rice
– 1 onion, chopped
– 2 cloves of garlic, minced
– 500 g of fresh spinach
– 1 tbsp of olive oil
– 1 tsp of salt
– 1/2 tsp of black pepper
– 300 ml of vegetable broth
– 2 tbsp of lemon juice
– 1/2 tsp of dried dill
Method
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and minced garlic. Cook until the onion is soft.
3. Stir in the rice and cook for about 2 minutes, mixing everything well.
4. Pour in the vegetable broth and season with salt, pepper, and dill. Bring to a boil.
5. Once boiling, reduce the heat, cover the pot, and let it simmer for 15 minutes. Add spinach and lemon juice, then stir until the spinach wilts.
