Carrots and Beans Poriyal

Ingredients
1 cup green beans, chopped
1 cup carrots, grated
1 tablespoon oil
1 teaspoon mustard seeds
1 teaspoon urad dal (split black gram)
1 pinch of asafoetida
2 tablespoons grated coconut
Salt, to taste
2 tablespoons water
Fresh coriander, chopped (for garnish)

Method
Heat the oil in a pan over medium flame.
Add the mustard seeds and wait for them to crackle.
Stir in the urad dal and asafoetida, cooking for a minute.
Mix in the green beans and carrots. Stir well, then add salt and water.
Cover and cook for about 5-7 minutes until the vegetables are tender. Sprinkle grated coconut on top and garnish with coriander before serving.
