Ingredients
1 kg potatoes
2 tbsp olive oil
2 onions, sliced
1 tsp salt
1 tsp black pepper
200 ml Greek yogurt
¼ cup milk
2 tbsp butter
2 tbsp fresh chives, chopped
Optional: extra salt and pepper for taste
Method
Peel the potatoes and cut them into chunks. Place them in a pot of cold water.
While the potatoes are cooking, heat olive oil in a skillet over medium heat. Add sliced onions, salt, and pepper. Cook for about 15 minutes until the onions are caramelized.
Drain the cooked potatoes and return them to the pot. Add Greek yogurt, milk, and butter to the potatoes.
Mash everything together until smooth and creamy. Stir in the caramelized onions and chives.
Taste the mixture and adjust with extra salt and pepper if needed.
