Kabocha Squash Pizza With Garlic Cream: A Flavorful Vegan Delight

Ingredients

– 1 small kabocha squash
– 2 tablespoons olive oil
– 250 ml water
– 1 teaspoon garlic, minced
– 1/2 teaspoon salt
– 1/4 teaspoon pepper
– 1/4 cup cream
– 1 pre-made pizza base
– 1 cup shredded mozzarella cheese
– Fresh herbs, for topping

Method

1. Preheat the oven to 220°C. Cut the kabocha squash in half and remove seeds. Place the halves on a baking tray, cut side up, and drizzle with olive oil.
2. Roast the squash for about 30 minutes or until it’s tender. Let it cool and then scoop out the flesh.
3. In a saucepan, combine water, minced garlic, salt, and pepper. Heat over medium and stir in the roasted squash until smooth. Add cream and mix well.
4. Spread the squash mixture over the pizza base evenly. Sprinkle shredded mozzarella cheese on top.
5. Bake the pizza in the oven for 10-12 minutes until the cheese is bubbly and golden. Remove from the oven and add fresh herbs as desired.
