Ingredients
– 4 medium potatoes (about 600g), peeled and chopped
– 1 cup grated cheese
– ½ cup breadcrumbs
– 1 small onion, finely chopped
– 1 egg
– ¼ cup fresh parsley, chopped
– 1 teaspoon salt
– ½ teaspoon pepper
– Cooking spray or olive oil
– Optional: Extra cheese for stuffing
Method
1. Boil the chopped potatoes in salted water until they are soft, then drain and mash them in a bowl.
2. Mix in the grated cheese, chopped onion, egg, parsley, salt, and pepper until everything is combined well.
3. Shape the potato mixture into small balls. If you want, place some extra cheese in the center of each ball.
4. Roll each ball in breadcrumbs to coat them thoroughly.
5. Arrange the balls on a baking tray lined with parchment paper and spray or brush them lightly with cooking oil. Bake at 200°C (400°F) for about 20-25 minutes, or until golden brown.
