Ingredients
– 1 cup white rice
– 2 cups water
– 1 can (400 ml) coconut milk
– 1 cup milk
– 1/2 cup sugar
– 1 teaspoon vanilla extract
– 1/2 teaspoon salt
– 1/4 cup dried fruit (like raisins or cranberries)
– 1/4 teaspoon cardamom powder
– Fresh fruit for topping (like mango or banana)
Method
1. Rinse the rice under cold water until the water runs clear. This removes excess starch.
2. Combine rice and water in a saucepan. Boil on medium heat, then lower to a simmer. Cover and cook until water is absorbed, about 15 minutes.
3. Stir in coconut milk, regular milk, sugar, vanilla extract, and salt. Cook on low heat for another 10-15 minutes, stirring frequently.
4. Add dried fruit and cardamom powder. Mix well and let it cook for 5 more minutes until heated through.
5. Serve warm or chilled, topped with fresh fruit.
