Ingredients

Method
- Start by mixing the cooled rice in a large bowl.
- Add diced cucumber, halved cherry tomatoes, chopped red onion, and parsley.
- In a separate bowl, whisk together olive oil, lemon juice, salt, black pepper, and red pepper flakes if desired.
- Pour the dressing over the rice mixture and toss everything until well combined.
- Serve immediately or chill in the fridge for about 30 minutes before enjoying.
