Ingredients

– 1 can (400g) black beans, drained and rinsed
– 1 can (400g) diced tomatoes
– 750 ml vegetable broth
– 1 bell pepper, chopped
– Salt and pepper to taste

Method

1. Heat the oil in a pressure cooker over medium heat.
2. Add chopped onion and cook until soft. Stir in the minced garlic and cook for an additional minute.
3. Mix in the cumin and smoked paprika, cooking for 30 seconds to release the aromas.
4. Add in the black beans, diced tomatoes, vegetable broth, and bell pepper. Stir to combine.
