Ingredients
– 1 tablespoon oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 tablespoon ginger, grated
– 1 can (400 ml) diced tomatoes
– 1 tablespoon curry powder
– 1 bunch kale, chopped
– 400 ml coconut milk
– Salt and pepper to taste
Method
1. Heat the oil in a large pan over medium heat.
2. Add the chopped onion and sauté until it becomes soft.
3. Stir in the minced garlic and grated ginger; cook for one minute.
4. Mix in the diced tomatoes, curry powder, and kale. Let it cook for about five minutes.
5. Pour in the coconut milk and season with salt and pepper. Simmer for another 10 minutes until everything is heated through.
