Ingredients
– 2 medium delicata squashes
– 2 tablespoons olive oil
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1 teaspoon garlic powder
– 1 teaspoon ground cumin
– 1/2 teaspoon smoked paprika
– 1 cup cooked quinoa
– 1/2 cup feta cheese, crumbled
– Fresh parsley, for garnish
Method
1. Preheat the oven to 200°C.
2. Slice the squashes in half lengthwise and remove the seeds.
3. Coat the squash halves with olive oil, salt, pepper, garlic powder, cumin, and smoked paprika.
4. Place them cut side down on a baking tray and roast in the oven for 25-30 minutes until tender.
5. Once cooked, flip the squashes, fill with quinoa, and sprinkle feta cheese on top. Garnish with parsley before serving.
