Ingredients
– 2 medium delicata squashes
– 2 tablespoons olive oil
– 1 teaspoon sea salt
– ½ teaspoon black pepper
– ½ teaspoon garlic powder
– ½ teaspoon smoked paprika
– ¼ teaspoon ground cinnamon
– ¼ teaspoon red pepper flakes
– 2 tablespoons maple syrup
– Fresh parsley for garnish
Method
1. Preheat the oven to 200°C.
2. Slice the delicata squashes in half lengthwise and scoop out the seeds.
3. Cut the squash into half-moon shapes and place them on a baking tray.
4. Drizzle the olive oil over the squash, then sprinkle with salt, pepper, garlic powder, smoked paprika, cinnamon, and red pepper flakes. Toss to coat evenly.
5. Roast for about 25-30 minutes until tender. Drizzle with maple syrup before serving and garnish with parsley.
