Delicious Roasted Delicata Squash Recipe: Simple & Flavorful

Ingredients

– 1 medium delicata squash
– 2 tablespoons olive oil
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1 teaspoon ground cinnamon
– 1 tablespoon maple syrup
– 1/4 cup walnuts, chopped
– 1 tablespoon fresh parsley, chopped
– 1 tablespoon balsamic vinegar
– 1/4 cup feta cheese, crumbled

Method

1. Preheat your oven to 200°C. Cut the delicata squash in half lengthwise and scoop out the seeds.
2. Slice the squash into half-moons about 1.5 cm thick. Place them in a large bowl.
3. Drizzle olive oil over the squash. Add salt, pepper, and cinnamon. Toss until all pieces are coated.
4. Spread the squash on a baking tray lined with baking paper. Roast in the oven for about 25–30 minutes or until tender.
5. Once done, remove from the oven. Drizzle with maple syrup, and sprinkle walnuts, parsley, balsamic vinegar, and feta cheese on top. Serve warm.
