Delicious Stuffed Tomatoes With Quinoa, Spinach, And Cheese Recipe

Ingredients

– 4 large tomatoes
– 1 cup quinoa
– 2 cups spinach, chopped
– 1 cup cheese, shredded
– 1 small onion, diced
– 2 cloves garlic, minced
– 1 tablespoon olive oil
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 teaspoon dried oregano

Method

1. Preheat the oven to 180°C (350°F).
2. Cut the tops off the tomatoes and scoop out the insides. Set them aside.
3. In a pot, cook quinoa according to package directions. This usually takes about 15 minutes.
4. Heat olive oil in a pan, then sauté onion and garlic until soft. Add spinach, cooked quinoa, salt, pepper, and oregano. Mix well.
5. Stuff each tomato with the quinoa mixture and place them in a baking dish. Sprinkle cheese on top. Bake for 15-20 minutes or until the tomatoes are tender.
