Ingredients

– 1 medium bottle gourd (sorakkai), peeled and chopped (about 3 cups)
– 1 onion, finely chopped
– 1 green chili, chopped
– 1 teaspoon grated ginger
– 2 tablespoons cooking oil
– 1 teaspoon mustard seeds
– 1 teaspoon urad dal (black gram)
– 1 teaspoon salt (adjust to taste)
– 2 tablespoons fresh coriander leaves, chopped
– ½ cup water

Method

1. Heat the oil in a pan over medium flame. Add mustard seeds and let them splutter.
2. Once the seeds pop, add urad dal, chopped onions, green chili, and ginger. Sauté until the onions turn golden brown.
3. Add the chopped bottle gourd and salt. Mix everything well.
4. Pour in the water, cover the pan, and let it cook for about 10 minutes or until the bottle gourd becomes soft.
5. Once cooked, mash the contents lightly with a spatula and stir in the fresh coriander leaves.
